Avocado Toast with Creamy Scrambled Eggs

Avocado Toast with Creamy Scrambled Egg; a quick, simple, and healthy protein packed breakfast. Do try it out! It's a superhit at our home. Its Naomi's all time favorite breakfast, snack or even as a light meal. Mix and match with a variety of smoothies, or in this case, a chilled Strawberry Smoothie.

Ingredients:-

2 large avocados salt and freshly ground black pepper  4 slices multigrain bread, toasted, I used brown bread 1 tablespoon unsalted butter  1/2 cup shredded cheese  4 large eggs, beaten  parsley for garnishing

1/2 teaspoon lemon zest

1 tablespoon lemon juice

4 cherry tomatoes for garnishing

Directions:-

Coarsely mash the avocados in a bowl with the lemon zest and juice, salt and pepper to taste. Spread the mash evenly onto the toasts.

In a medium skillet melt butter over medium to low heat. Add the beaten eggs, shredded cheese salt, pepper to taste stirring with a rubber spatula, until the mixture is creamy approximately five minutes. Spoon the eggs onto the toasts and top cherry tomatoes and parsley. Sprinkle with salt and pepper. EnJoY
