Avocado Toast with Sunny Side Egg

A simple, quick and easy healthy protein-packed breakfast; snack or light meal toast, which can be made either fried, scrambled, boiled or poached. Do try out this yummy Avocado Toast with Sunny Side Egg. This is my daughter's and my kind of breakfast in a hurry.

Ingredients:-
2 large avocados salt and freshly ground black pepper 4 slices multigrain bread, toasted, I used brown bread 1 tablespoon unsalted butter 2 large eggs Cilantro for garnishing
1/2 teaspoon lemon zest
1 tablespoon lemon juice
1 small tomato for garnishing


Directions:-
Coarsely mash the avocados in a bowl with the lemon zest and juice, salt and pepper to taste. Spread the mash evenly onto the toasts.
In a medium skillet melt butter over medium to low heat. Heat some butter. Break an egg onto the skillet and reduce the heat to low. Cook uncovered until whites set. You can however cover it up once the whites have set should you you wanted a more firm yolk. Place the eggs onto the toasts and top with sliced/chopped tomatoes and cilantro. Sprinkle with salt and pepper. EnJoY
