Savory French Toast Muffins

This yumlecious one pan muffin breakfast was a super hit at my place. My daughter loved them. This will now be one of her all time favorite breakfast. Do try of this recipe.






Ingredients:- 6 slices bread, I used stale Jalapeno Cheese bread. 1 small onion finely chopped 1 small tomato finely chopped

1 jalapeno finely chopped

1 cup bacon bits

6 eggs

1 cup shredded cheese

1 cup milk

Canola Oil cooking spray

salt, ground black pepper and paprika to taste

parsley for garnishing

Directions:-

Preheat oven to 375F. Prepare a muffin pan by generously spraying with cooking spray and keep aside. Cube break and set aside.

In a large bowl whisk together eggs, milk, black pepper, paprika and cheese. Add onions, tomatoes, jalapeno. Add cubed bread and mix gently. Let stand for approximately 15/20 minutes. Scoop 1/4 cup of the bread mixture into each tins, slightly pressing down if necessary. Sprinkle the top with bacon bits and chopped parsley.

Bake for 20 – 25 minutes until golden brown and puffed. Allow muffins to cool for at least five minutes before gently removing from tins and serve .
